Ingredients:
- 1 cup of butter, cubed and at room temperature
- 3 ½ cups of all-purpose flour
- ½ cup of confectioner's sugar
- 2 egg yolks
- ⅓ cup of ground almonds
- 2 tablespoons of water
- 20 oz of mixed dried fruit
- 3 oz of mixed orange and lemon peel
- ¾ cup of almond slivers, toasted
- 1 large apple, cored and chopped (but not peeled)
- 4 cups of dark muscovado sugar
- 1 teaspoon of nutmeg powder
- ½ teaspoon of allspice powder
- ½ teaspoon of cinnamon powder
- Grated rind and juice of 1 orange
- 1 egg, beaten (for glaze)
- Flour for dusting
- Confectioner's sugar to decorate
Instructions:
1. Turn on the oven to 390°F.
2. Let's start with the crust! Sift the flour into a bowl.
3. Add the butter, confectioner's sugar, and ground almonds to the bowl. Use your fingers to rub them together until they look like breadcrumbs.
4. Add the egg yolks and a tablespoon of cold water.
5. Knead the mixture gently until it forms a soft dough.
6. Put the dough in the fridge for 30 minutes.
7. Now, let's make the mincemeat! Put the dried fruit, orange and lemon peels, and toasted almonds in a saucepan.
8. Cook it on low heat for a few minutes and stir it often.
9. Add the chopped apples, muscovado sugar, nutmeg, allspice, and cinnamon to the pan.
10. Add the orange rind and juice and mix everything together until it's soft and well combined.
11. Take the pan off the heat and let the mixture cool down. Stir it occasionally.
12. Sprinkle some flour on a surface and on the pastry dough.
13. Roll out the pastry dough into a thin sheet.
14. Use cookie cutters to cut out 6 round shapes and 6 star shapes from the dough.
15. Gently press the round shapes into a bun pan or mini tart pans.
16. Put a spoonful of mincemeat in each of the round shapes.
17. Brush a little water on one side of the star shapes.
18. Put the star shapes on top of the mincemeat, with the wet side down.
19. Gently press the edges to seal them.
20. Brush the tops of the stars with the beaten egg.
21. Put the pan in the oven and bake for 20 minutes or until the pies are golden brown.
22. Take the pies out of the oven and sprinkle them with confectioner's sugar.
23. Serve them hot or cold!
