- 4 oz smoked bacon, minced
- Turkey liver, diced
- 3 1/3 cups cooked and diced chestnuts
- 4 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1/4 teaspoon ground mace (or nutmeg)
- 8 oz ground pork
- Salt and pepper to taste

Instructions:

1. Make the Stuffing: Melt some butter in a big frying pan over medium heat. Add the onion, bacon, and turkey liver and cook for about 10 minutes, until the onion is soft and everything is starting to brown. Stir it up so it doesn't stick!

2. Mix the Stuffing: Put the cooked onion mixture in a big bowl. Add the chestnuts, parsley, thyme, mace, ground pork, salt, and pepper. Mix it all together really well!
