Ingredients:

For the Churros:
- 1 cup milk
- 1/2 stick of unsalted butter
- A pinch of salt
- 1 cup flour
- 4 eggs
- Vegetable oil (for frying)

For the Chocolate Sauce:
- 9 oz Mexican chocolate
- 1/2 cup heavy cream
- 3 tablespoons butter
- 2 tablespoons light corn syrup
- Water

For the Cinnamon & Sugar Mix:
- 1 cup sugar
- 1 tablespoon ground cinnamon
- A pinch of salt

Instructions:

1. Make the Dough: First, let's make the churro dough. In a small saucepan, mix the milk, salt, and butter. Turn on the stove to medium heat and bring it to a boil. Cook for 5 minutes or until the butter melts and the milk starts to bubble. Then, add the flour all at once and quickly stir until it's smooth and there are no lumps. Turn off the stove and let the dough cool for a few minutes.

2. Add the Eggs: Put the dough in a mixing bowl. Crack the eggs one at a time into the dough, mixing well after each one.

3. Prepare the Pastry Bag: Put the dough into a pastry bag with a big star-shaped tip. This will help us make the churros look fancy!

4. Mix the Cinnamon Sugar: In a wide bowl, mix the cinnamon, sugar, and salt together. This will be our yummy coating for the churros.

5. Make the Chocolate Sauce: Fill the bottom of a small saucepan with water and bring it to a boil. Let it cook for 20 minutes on high heat. Then, put a heat-safe bowl on top of the saucepan. Put the Mexican chocolate, heavy cream, butter, and corn syrup in the bowl. Cook for 5 minutes, stirring occasionally, until the chocolate melts and everything is mixed together.

6. Fry the Churros: Heat up some oil in a deep fryer. When it's hot, carefully squeeze the dough from the pastry bag into the oil, making long sticks or fun shapes. Fry the churros for 1-2 minutes until they're golden brown and crispy.

7. Coat in Cinnamon Sugar: Take the cooked churros out of the oil and pat them dry with a paper towel. While they're still warm, roll them in the cinnamon sugar mixture.

8. Serve and Enjoy! Arrange the churros on a plate with the warm chocolate sauce. Dip, dunk, and enjoy your delicious churros con chocolate!
