Ingredients:
For the Cake:
- 1 2/3 cups superfine sugar
- 3/4 cup softened butter
- 4 medium eggs
- 1 1/2 cups self-rising flour
- 5 1/2 tablespoons cocoa powder
- 2 tablespoons milk
For the Fudge Frosting:
- 1 cup heavy cream
- 1/4 cup butter
- 3 tablespoons honey
- 1 1/2 cups dark chocolate
For the Decorations:
- Sliced almonds
- Shaved chocolate
- Cherries
Instructions:
1. Preheat the Oven: Turn on your oven to 375 degrees Fahrenheit.
2. Prep the Pans: Get two cake pans ready and line them with special baking paper so the cake doesn't stick.
3. Mix the Batter: In a big bowl, beat the butter until it's soft and fluffy. Add the sugar and keep mixing. Then, crack the eggs into the bowl, one at a time, and mix well after each one. Finally, add the flour and cocoa powder and mix everything together until you have a smooth batter.
4. Bake the Cake Layers: Divide the batter equally between the two cake pans and use a spatula to make the tops nice and smooth. Put the pans in the preheated oven and bake for 20 minutes. You can check if they're done by poking them with a fork – if it comes out clean, the cakes are ready!
5. Cool the Cakes: Take the cake pans out of the oven and let them cool for a few minutes. Then, carefully turn them upside down onto a wire rack to cool completely.
6. Make the Frosting: Heat the heavy cream in a saucepan until it starts to bubble. Add the butter, honey, and dark chocolate, and stir until the chocolate melts and everything is mixed together. Don't stir too much, or the frosting will lose its shine!
7. Frost the Cake: Use a special knife called a palette knife to spread the frosting on one of the cooled cake layers. Place the second layer on top and frost the whole cake, including the sides.
8. Decorate! Sprinkle sliced almonds around the sides of the cake. Then, add cherries and shaved chocolate on top to make it look extra fancy!
