Ingredients:

For the Stew:
- 4 tablespoons olive oil
- 16 oz chuck steak, cubed
- 1 onion, chopped
- 4 garlic cloves, chopped
- 14 oz chopped tomatoes
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 chili pepper, chopped (be careful, it's spicy!)
- 1/2 teaspoon cayenne powder
- 1 teaspoon cumin powder
- 1 teaspoon oregano
- 14 oz cooked or canned red kidney beans
- 1/2 cup chicken stock
- Salt and pepper (to taste)

For the Garnish:
- Shredded Colby-Monterey Jack cheese
- 1 scallion, sliced

Instructions:

1. Turn on the Oven: Preheat your oven to 350 degrees Fahrenheit (or gas mark 4).

2. Heat the Oil: Put a big pot on the stove and turn the heat to medium. Add the olive oil and let it warm up.

3. Cook the Beef: Add the cubed steak to the hot oil and cook it for 6-7 minutes, stirring it around sometimes until it turns brown.

4. Add the Veggies: Throw in the chopped onions and cook them for a few minutes until they get soft. Then, add the garlic, green pepper, red pepper, and chili pepper. Mix everything together well.

5. Spice it Up: Now it's time for the spices! Add the cayenne powder, cumin powder, and oregano to the pot and stir until everything is coated.

6. Tomatoes and Stock: Add the chopped tomatoes and chicken stock to the pot. Let it all simmer gently, stirring occasionally.

7. Oven Time: Put the pot with the chili in the preheated oven and bake it for 1 hour. Remember to stir it a few times so it doesn't stick.

8. Add the Beans: After an hour, take the pot out of the oven and stir in the kidney beans.

9. Bake Again: Put the pot back in the oven for another 15 minutes.

10. Serve and Enjoy! Scoop some of the chili into a bowl and top it with shredded cheese and sliced scallions. Now it's time to dig in!
