Recipe:
- ¾ cup all-purpose flour
- ¾ cup granulated white sugar
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup walnuts, chopped and toasted
- 2 large eggs
- ½ cup unsalted melted butter
- 3 ripe large bananas, mashed
- 1 teaspoon vanilla extract
Directions:
1. Start by preheating the oven to 350 degrees. While it's warming up, line a muffin tin with colorful paper cases.
2. In a big bowl, mix together the flour, sugar, baking powder, baking soda, salt, cinnamon, and toasted walnuts. Stir until everything is well combined.
3. In another bowl, beat the eggs until they're light and fluffy. Then, add the mashed bananas, melted butter, and vanilla extract. Mix this all together until it's smooth.
4. Pour the wet banana mixture into the dry flour mixture. Use a spoon to gently fold them together until they're just combined. Don't overmix, or your muffins will be tough!
5. Now it's time to fill those muffin cups! Use a spoon to scoop the batter into each one, filling them about ¾ full. Then, sprinkle some extra chopped walnuts on top for a crunchy finish.
6. Pop the muffin tin into the oven and bake for about 25 minutes. You can tell they're done when a toothpick inserted into the center comes out clean.
7. Carefully remove the muffins from the tin and let them cool for a bit. Then, enjoy them warm, or save them for later – if you can resist!
With Sara's guidance, you'll discover how fun and easy baking can be. So, grab your virtual mixing bowl and get ready to create some yummy treats that will make your tummy happy!
